MUTTA CHEERA THORAN / EGG WITH SPINACH THORAN

INGREDIENTS:
   
* Mutta / Egg.........................................................................4 nos
* Cheera / Spinach / Green / Palak finely chopped............1 cup
* Injee / Giner / Adarak finely chopped..............................1 tsp
* Pacha Mulaku / Green Chilli / Hara Mirch....................5 nos
* Mulaku Podi / Chilli Powder / Lal Mirch.......................1 tsp
* Savala / Onion finely chopped / Piaz..............................1 no
* Chirakiya Thenga / Grated Coconut / Nariyl.................1/2 cup
* Kaduku / Mustard Seeds / Sarson...................................1/2 tsp
* Kariveppila / Curry Leaves / Currypatta........................2 sprigs
* Velichenna / Coconut Oil / Nariyal Ka Thel OR Any refined Oil
* Salt to taste.

DIRECTIONS:

1. Heat a pan with 3 to 4 tbsp coconut oil. Add finely chopped ginger, green chilli, onion and saute it a minute.
 

                                          
  
  
  
2. Add chilli powder, grated coconut, saute it a minute.

3. Add finely chopped cheera / spinach and stir well for 4 to 5 minutes.

4. Add 4 beaten eggs with little salt and stir well for 4 minutes.Heat a pan with 1 tsp coconut oil, Add 2 sprigs curry leaves, saute it a few seconds and sprinkle the curry leaves on Egg with spinach thoran. Now Mutta Cheera Thoran / Egg With Spinach Thoran is ready. Serve hot with rice, Roti etc...

TIPS:

* Springle 1 tbsp coconut oil for flavour just before finishing the cooking
* Add kashmiri chilli powder for more color
