PORK CURRY KERALA STYLE


This is a delicious recipe of Kerala. Kerala style pork curry is little spicy and in rich  thick gravy. I am a fan of pork curry, pork stir fry, pork vindaloo etc...I really enjoy with pork stir fry..but pork curry is different taste and having thick gravy and spicy, It is best combo with rice, chapathi, poori etc..Whenever I get a chance to buy non Veg, I go for pork.                                    INGREDIENTS:

* Pork....................................................1 kg 
* Red chilli powder...............................6 tbsp
* Black pepper......................................2 tbsp
* Coriander powder.............................6 tbsp
* Turmeric powder..............................1 tsp
* Garam masala..................................3 tbsp
* Ginger finely chopped.....................1 tbsp
*Garlic finely chopped......................1 tbsp
* Onion finely chopped.....................2 nos
* Tomato cut into small pieces.........2 nos
* Vinegar..........................................2 tsp
* Soya sauce....................................2 tsp
* Curry leaves.................................2 sprigs
* Coconut oil..................................3 tbsp
* Salt to taste.

                                            DIRECTIONS

1. Cut Pork into medium size pieces. Wash and Keep aside.

2. Cook the Pork along with 1/2 tsp turmeric powder, 2 tbsp roasted coriander powder, 2 tbsp roasted chilli powder, 2 to 4 cups of water and some salt. 

3. Heat a pan with 3 tbsp coconut oil. Add finely chopped ginger-garlic and stir for a few seconds. Add curry leaves,  finely chopped onion and saute on medium flame till golden brown.

4. Now add roasted 4 tbsp coriander powder, 4 tbsp chilli powder, 1/2 tsp turmeric powder, 2 tbsp pepper powder, garam masala powder saute it in a low flame. Please take care that don't burn the masala.

5. Add tomato pieces and salt and saute it in a medium flame till the tomatoes get mashed up.

6. Now add the cooked pork, vinegar, soya sause stir it well with the masala for 5 minutes so that pork is completely soaked in the masala. When done, remove from the flame.

7. Serve hot with rice, chapathi etc...

* Take pork without outer skin. If you take pork with outer skin, after cooking the pork you can see a lot of oil from it. 
* Adjust chilli powder as per your taste.
